In a large mixing bowl, combine buttermilk, hot sauce, garlic powder, onion powder, salt, black pepper, and paprika. Mix well until all ingredients are fully incorporated.

Add the gator meat to the marinade, ensuring all pieces are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

In a separate bowl, mix together the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Stir until combined.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of the breading into the oil; it should sizzle immediately.

Breading the Gator
Remove the gator meat from the marinade, allowing excess liquid to drip off. Dredge each piece in the breading mixture, ensuring an even coating. Shake off any excess breading.

Carefully place the breaded gator pieces into the hot oil, working in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy, turning occasionally for even cooking.

Once fried, remove the gator pieces from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
