    Prepare the Lobster

    If using whole lobsters, steam or boil them until fully cooked, about 8-10 minutes. Remove the meat from the shells and chop it into bite-sized pieces. Set aside.

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and carrot. Sauté until the vegetables are soft, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 2 minutes. Pour in the dry white wine and bring the mixture to a simmer. Allow it to reduce by half, about 5 minutes.

    Add Stock

    Pour in the fish or lobster stock and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.

    Blend the Soup

    Using an immersion blender, purée the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a countertop blender. Return the soup to the pot.

    Add Cream and Season

    Stir in the heavy cream and add the lobster meat. Season with salt, black pepper, and cayenne pepper. Heat through for about 5 minutes, but do not let it boil.

    Ladle the bisque into bowls and garnish with chopped fresh parsley before serving.
