Cut the gator meat into bite-sized pieces, approximately 1-2 inches in size.

Place the cut gator meat into a bowl and pour buttermilk over it. Cover with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
Breading and Frying

In a large bowl, combine the flour, cornmeal, salt, black pepper, garlic powder, paprika, and cayenne pepper. Mix well.

Remove the gator meat from the buttermilk and let any excess drip off. Dredge each piece in the flour-cornmeal mixture, ensuring it is fully coated.

In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading mixture into it; if it sizzles, it's ready.
