Crust Preparation

Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes. Remove and let cool.
Filling Preparation

Mix cream cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add sugar and sour cream
Gradually add the granulated sugar and continue mixing until combined. Then add the sour cream and vanilla extract, mixing until smooth.

Incorporate eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Pour filling into crust
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.
Baking and Cooling

Bake the cheesecake
Bake the cheesecake in the preheated oven at 350°F (175°C) for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool and chill
Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for 1 hour. Then refrigerate for at least 4 hours, or overnight for best results.

Prepare the topping
Just before serving, wash the fresh berries and pat them dry. In a small bowl, toss the berries with powdered sugar to coat lightly.

Remove the cheesecake from the springform pan and top with the sugared berries. Slice and enjoy!
