Prepare the Bread

    Toast the Bread

    Preheat a skillet over medium heat. Drizzle olive oil on both sides of each slice of sourdough bread. Place the slices in the skillet and toast for about 2-3 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.

Make the Bourginese Topping

    Sauté the Aromatics

    In the same skillet, add a little more olive oil if needed. Add the minced garlic and chopped shallots. Sauté for 2-3 minutes until they become fragrant and translucent.

    Cook the Mushrooms

    Add the sliced mushrooms to the skillet. Cook for about 5-7 minutes until the mushrooms are browned and tender.

    Deglaze and Season

    Pour in the red wine and scrape up any browned bits from the bottom of the skillet. Allow the wine to simmer for 2-3 minutes until it reduces slightly. Stir in the chopped thyme, salt, and black pepper.

    Remove the skillet from heat and stir in the grated Parmesan cheese until melted and well combined.

Assemble the Toast
