Cooking Pasta

    Boil Water

    In a large pot, bring 4 quarts of water to a rolling boil. Add a generous pinch of salt.

    Cook Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Preparing Vegetables

    Chop Vegetables

    While the pasta cooks, wash and chop the bell peppers, zucchini, and carrots into bite-sized pieces. Halve the cherry tomatoes and rinse the spinach.

    Sauté Aromatics

    In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant and the onion is translucent.

    Add Vegetables

    Add the chopped bell peppers, zucchini, and carrots to the skillet. Sauté for 5-7 minutes until they start to soften. Add the cherry tomatoes and spinach, cooking for an additional 2-3 minutes until the spinach wilts.

Combining Ingredients

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss everything together to combine.

    Season and Serve

    Season with salt, black pepper, and mix in the grated Parmesan cheese and fresh basil. Serve immediately, garnished with extra Parmesan if desired.
