Cake Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with flour.

    Melt Chocolate and Butter

    In a medium heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals, stirring until smooth.

    Mix Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened (about 3 minutes).

    Combine Mixtures

    Gently fold the melted chocolate and butter mixture into the egg mixture until fully combined. Be careful not to deflate the eggs.

    Add Flour and Flavorings

    Sift the all-purpose flour into the chocolate mixture, and add the vanilla extract and a pinch of salt. Fold gently until just combined.

    Fill Ramekins

    Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

    Bake

    Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool Slightly

    Remove the ramekins from the oven and allow them to cool for 1-2 minutes. Run a knife around the edges to loosen the cakes.

    Invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on the side.
