Prepare the Bruschetta Topping

Chop the Tomatoes
Wash and dice the fresh tomatoes into small cubes and place them in a mixing bowl.

Add Basil
Tear the fresh basil leaves into smaller pieces and add them to the bowl with the tomatoes.

Prepare Mozzarella
Cut the mozzarella cheese into small cubes and add it to the tomato and basil mixture.

Add Seasoning
Mince the garlic cloves and add them to the bowl. Then, drizzle in the extra virgin olive oil, and add salt and black pepper to taste. Mix gently to combine all ingredients.
Prepare the Bread

Slice the Bread
Slice the baguette or ciabatta bread into 1/2 inch thick slices.

Toast the Bread
Preheat your oven to 400°F (200°C). Place the sliced bread on a baking sheet and brush both sides with extra virgin olive oil. Toast in the oven for about 5-7 minutes or until golden brown and crisp.
Assemble the Bruschetta

Top the Toasted Bread
Once the bread is toasted, remove it from the oven and let it cool slightly. Spoon the bruschetta topping onto each slice of toasted bread.

Serve the bruschetta immediately while the bread is still warm and enjoy!
