Pat the filet mignon dry with paper towels and season both sides generously with kosher salt and freshly ground black pepper. Allow the steak to sit at room temperature for about 30 minutes before cooking.

Sear the Steak
Once the oil is hot, add the filet mignon to the skillet. Sear for about 4-5 minutes on one side, until a golden-brown crust forms.

Flip and Add Aromatics
Carefully flip the steak using tongs. Add garlic cloves and fresh rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, adjusting the time based on desired doneness.

Remove the steak from the skillet and let it rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute.
