Method
Cake Preparation
Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
Combine Mixtures
Gradually add the wet mixture to the dry ingredients, stirring until just combined.
Bake the Cake
Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cool Cakes
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.
Mousse Preparation
Melt Chocolate
In a microwave-safe bowl, melt the semi-sweet chocolate in 30-second intervals until smooth. Let it cool slightly.
Whip Cream
In another bowl, whip the heavy cream until soft peaks form.
Fold Mixtures
Gently fold the whipped cream into the chocolate mixture until no white streaks remain.
Assembly
Layer the Mousse
Place one layer of the cooled cake on a serving platter. Spread half of the mousse over the cake layer.
Add Second Layer
Top with the second layer of cake and spread the remaining mousse on top.
Chill
Refrigerate the cake for at least 4 hours or until the mousse is set.
Garnish and Serve
Before serving, garnish with chocolate shavings and fresh berries as desired.
