Make the crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined and crumbly. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and continue to beat until well combined. Add sour cream, vanilla extract, and flour, mixing until smooth. Finally, add eggs one at a time, mixing on low speed until just combined. Do not overmix.

Bake the cheesecake

Pour the cream cheese mixture over the prepared crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly golden. Turn off the oven and leave the cheesecake inside for an additional hour to cool.

Remove from the oven and let it cool to room temperature. Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, before removing from the springform pan.
