Prepare the Mozzarella
In a large pot, bring 1 liter of water to a gentle simmer. Add 1 tsp of salt. Tear the fresh mozzarella into small pieces and gently place them in the simmering water. Let them cook for 1-2 minutes until they are warm and pliable. Remove from water and set aside.

Make the Spinach & Walnut Pesto
In a food processor, combine the fresh spinach, walnuts, olive oil, and grated Parmesan cheese. Blend until smooth. Adjust seasoning with salt to taste.

Prepare Vin's Famous Garlic Bread
Preheat your oven to 180°C (350°F). In a small saucepan, melt the butter and add minced garlic cloves, cooking until fragrant. Slice the baguette in half lengthwise and spread the garlic butter on each half. Place on a baking sheet and bake for 10-12 minutes, until golden and crispy.

Assemble the Dish
On a serving platter, arrange the warm mozzarella pieces. Drizzle with the spinach and walnut pesto. Serve alongside the warm garlic bread.
