Cook the Lamb Bolognese

In a large skillet or saucepan, heat olive oil over medium heat. Add chopped onions, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.

Brown the Lamb

Increase heat to medium-high and add the ground lamb. Cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.

Add Flavors

Stir in tomato paste and cook for another minute. Then add canned crushed tomatoes, red wine, chopped rosemary, salt, and black pepper. Bring to a simmer.

Simmer

Reduce heat to low and let the sauce simmer for about 30 minutes, stirring occasionally.

Assemble the Dish

Preheat your oven to 350°F (175°C). Spread the lamb bolognese in a baking dish. Top with shredded mozzarella and crumbled goat cheese.

Bake

Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden.

Remove from the oven and let it cool slightly. Top with house-pickled local hot peppers before serving. Enjoy!
