In a skillet over medium heat, add a tablespoon of truffle oil. Once hot, add the mixed mushrooms and sauté for about 5-7 minutes until they are golden brown and tender. Season with salt and pepper to taste. Remove from heat and set aside.

In a mixing bowl, combine the Fontina and Provolone cheeses, chopped green onions, and fresh thyme leaves. Mix well until thoroughly combined.

In a serving dish, layer the sautéed mushrooms on the bottom. Top with the cheese mixture, spreading it evenly. Drizzle the remaining tablespoon of truffle oil over the top.
