    Prepare the Polenta

    In a medium pot, bring the vegetable broth to a boil. Slowly whisk in the polenta, stirring continuously to avoid lumps.

    Cook the Polenta

    Reduce the heat to low and cook the polenta for about 15-20 minutes, stirring frequently, until it thickens and pulls away from the sides of the pot.

    Season the Polenta

    Stir in the salt, black pepper, garlic powder, and olive oil. If using, mix in the Parmesan cheese until well combined.

    Set and Chill the Polenta

    Pour the polenta into a greased baking dish or a lined tray, smoothing it into an even layer. Let it cool and set for at least 30 minutes in the refrigerator.

    Cut the Fries

    Once set, remove the polenta from the dish and cut it into fry-shaped pieces.

    Coat with Cornstarch

    Lightly coat each polenta fry with cornstarch to help them crisp up when baked.

    Bake the Fries

    Preheat the oven to 425°F (220°C). Place the polenta fries on a baking sheet lined with parchment paper, drizzle with olive oil, and bake for 25-30 minutes until golden and crispy, flipping halfway through.

    Remove from the oven, season with additional salt and herbs if desired, and serve immediately.
