    Prepare the Onions

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized, about 20-25 minutes.

    Add Flavor

    Once the onions are caramelized, add the balsamic vinegar and fresh thyme. Stir well and cook for an additional 2-3 minutes. Remove from heat and let cool slightly.

    Prepare the Puff Pastry

    Preheat the oven to 400°F (200°C). Roll out the puff pastry sheet on a lightly floured surface and cut it into squares or circles, depending on your preference.

    Assemble the Tarts

    Place the puff pastry pieces on a baking sheet lined with parchment paper. Spoon a portion of the caramelized onion mixture onto each piece, leaving a small border around the edges. Sprinkle crumbled goat cheese on top.

    Brush the edges of the puff pastry with the beaten egg. Bake in the preheated oven for 15-20 minutes or until the pastry is golden and puffed.
