Preparing Pork Belly

Preheat your oven to 300°F (150°C). Rub the pork belly with salt, black pepper, and cumin, ensuring it's evenly coated.

In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, sear the pork belly on all sides until golden brown, about 3-4 minutes per side.

Roast the Pork Belly
Transfer the skillet to the preheated oven and roast for approximately 2.5 to 3 hours, or until the pork belly is tender and the skin is crispy. Let it rest for at least 15 minutes before slicing.

In a medium bowl, combine sour cream, lime juice, garlic powder, and salt. Stir until smooth and well combined. Adjust salt to taste.
Assembling Tacos

Prepare Tortillas
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable.

Slice the rested pork belly into small strips or cubes.
