Method

Fish Preparation

  1. 1

    Prepare the batter

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Gradually add the beer while whisking until the batter is smooth and free of lumps.

  2. 2

    Heat the oil

In a deep fryer or a large heavy pot, heat the vegetable oil to 350°F (175°C).

  3. 3

    Batter the cod

Dip each cod fillet into the batter, ensuring it is fully coated.

  4. 4

    Fry the fish

Carefully place the battered cod into the hot oil, frying a few pieces at a time to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Fries Preparation

  1. 5

    Cut the potatoes

Peel the potatoes and cut them into thick fries or wedges.

  2. 6

    Fry the potatoes

In the same oil used for the fish, fry the potato wedges in batches until golden brown and crispy, about 5-8 minutes. Remove and drain on paper towels, then season with salt and black pepper.

Tartar Sauce Preparation

  1. 7

    Mix the ingredients

In a small bowl, combine the mayonnaise, finely chopped pickles, lemon juice, capers, and salt. Mix well until fully combined.
