Prepare the Bison Patty

Mix Seasoning
In a large bowl, combine ground bison, salt, black pepper, garlic powder, and onion powder. Mix until well combined but do not overwork the meat.

Form Patties
Divide the mixture into four equal portions and shape them into patties, making a slight indentation in the center of each patty to prevent puffing during cooking.
Prepare the BBQ Sauce

Combine Ingredients
In a small saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Simmer Sauce
Cook over medium heat for about 10 minutes, stirring occasionally, until the sauce thickens slightly. Adjust seasoning to taste, then remove from heat.

Toast Buns
Lightly toast the brioche buns on the grill or in a toaster until golden brown.

Spread a generous amount of house-made BBQ sauce on the bottom half of each bun. Place the cooked bison patty with melted cheddar on top, followed by crispy onions, lettuce, sliced tomato, and pickles.

Top with the other half of the bun, serve immediately, and enjoy your delicious bison burger!
