Dough Preparation

Activate Yeast
In a small bowl, combine warm water, brown sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Add the yeast mixture to the flour and mix until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Shaping and Boiling

Shape Pretzels
Preheat your oven to 450°F (232°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, about 24 inches long, then twist it into a pretzel shape.

Boil Pretzels
In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on a parchment-lined baking sheet.

Beat the egg in a small bowl and brush the egg wash over each pretzel. This will give them a beautiful golden color.

In a small bowl, combine yellow mustard, hot sauce, and honey. Stir until well blended.
