    Prepare the Beef

    Season the Wagyu beef chuck with salt and black pepper. Heat olive oil in a large Dutch oven over medium-high heat and sear the beef on all sides until browned. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add cipollini onions and sauté for about 5 minutes until they are slightly caramelized. Add garlic and sauté for another minute until fragrant.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for 3-5 minutes.

    Braised Beef

    Return the beef to the pot and add beef broth, heirloom carrots, and fresh thyme. Bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours until the beef is tender.

    Prepare Fingerling Potatoes

    While the beef is braising, preheat the oven to 425°F (220°C). Toss fingerling potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.

    Serve

    Once the beef is tender, remove it from the pot and let it rest for a few minutes. Serve the braised beef with heirloom carrots, cipollini onions, and roasted fingerling potatoes.
