Steak Preparation

Season the Steak

Season the Akaushi skirt steak with salt and black pepper on both sides.

Cook the Steak

Heat olive oil in a skillet over medium-high heat. Add the steak and cook for 3-4 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

Rest the Steak

Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Prepare the Potatoes

Peel and dice the Yukon Gold potatoes into small cubes.

Cook the Potatoes

In a large skillet, heat duck fat over medium heat. Add the diced potatoes, season with salt and rosemary, and cook for 15-20 minutes until golden and crispy, stirring occasionally.

Chimichurri Sauce

Make the Chimichurri

In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until smooth. Adjust seasoning as needed.

Cook the Egg

In a non-stick skillet, melt butter over low heat. Crack the eggs into the skillet and cook for 2-3 minutes until the whites are set but the yolks are still runny. Season with salt and pepper to taste.
