Prepare the Vegetables

Preheat your oven to 400°F (200°C). Toss the broccolini and baby carrots with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for about 15-20 minutes until tender and slightly caramelized.

Sear the Salmon

While the vegetables are roasting, heat a skillet over medium-high heat. Season the salmon fillets with salt and pepper. Add a bit of oil to the skillet and sear the salmon for about 4-5 minutes on each side, or until golden brown and cooked to your desired doneness.

Make the Lemon Butter Caper Sauce

In a small saucepan, melt the butter over medium heat. Add minced garlic and capers, and cook for 1-2 minutes until fragrant. Stir in the lemon juice and season with salt and pepper to taste. Remove from heat.

Combine and Serve

On a plate, serve the seared salmon with a side of roasted broccolini, baby carrots, and cherry tomatoes. Drizzle with the lemon butter caper sauce and garnish with fresh herbs.
