    Prepare the Chimichurri Sauce

    In a food processor, combine fresh parsley, garlic cloves, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Blend until smooth and set aside.

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. In a large skillet, heat duck fat over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden and crispy, about 15-20 minutes. Stir occasionally.

    Cook the Skirt Steak

    Season the skirt steak with salt and black pepper. In a separate skillet, heat a little olive oil over high heat. Add the steak and cook for about 3-4 minutes per side for medium-rare, adjusting time based on preferred doneness. Remove from the skillet and let rest for a few minutes before slicing.

    Fry the Eggs

    In the same skillet used for the steak, crack the eggs and cook sunny side up until the whites are set, about 2-3 minutes.

    Assemble the Dish

    On a plate, layer the crispy duck fat potatoes, sliced skirt steak, and top with a sunny side up egg. Drizzle with chimichurri sauce before serving.
