Prepare Garlic-Chili Crisp

    Make the Crisp

    In a small saucepan, heat vegetable oil over medium heat. Add minced garlic and red chili flakes, and sauté until garlic is golden brown. Remove from heat and stir in chopped green onions. Set aside.

Prepare Corn Purée

    Cook the Corn

    In a medium pot, combine corn kernels, heavy cream, butter, and salt. Cook over medium heat until the corn is tender, about 10 minutes. Use an immersion blender to purée until smooth. If too thick, add a little water to reach desired consistency.

Sear the Scallops

    Sear Scallops

    Pat the scallops dry with paper towels and season both sides with salt and pepper. In a large skillet, heat olive oil over high heat. Add scallops in a single layer and sear for 2-3 minutes per side until golden brown and cooked through. Do not overcrowd the pan; cook in batches if necessary.

Assembly

    Plate the Dish

    On each plate, spread a generous amount of corn purée, top with seared scallops, and drizzle with the garlic-chili crisp. Serve immediately.
