Prepare the Beets
Preheat your oven to 400°F (200°C). Scrub the red and golden beets under running water, then trim the tops and tails. Wrap each beet in aluminum foil and place them on a baking sheet.

Make the Goat Cheese Crema
While the beets are roasting, blend the goat cheese, cream cheese, and heavy cream in a food processor until smooth and creamy. Set aside.

Prepare the Orange Puree
In a small saucepan, combine the orange juice and honey. Bring to a simmer over medium heat and reduce until slightly thickened, about 10-15 minutes. Add the orange zest and stir to combine. Set aside to cool.

Serve
Once the beets are roasted and tender, remove them from the oven and let them cool slightly. Peel the skins off the beets, then slice them into wedges. Arrange the beets on a plate, drizzle with the orange puree, and dollop the goat cheese crema on top.
