Lobster Bisque Directions

    Prepare the Lobster Stock

    In a large pot, melt the butter over medium heat. Add lobster shells and sauté for about 5 minutes until fragrant.

    Sauté Vegetables

    Add the chopped onion, carrot, celery, and garlic to the pot. Cook for 5-6 minutes until the vegetables are softened.

    Add Tomato Paste and Cognac

    Stir in the tomato paste and cook for 2 minutes. Carefully add the cognac and let it simmer for a few minutes until slightly reduced.

    Add Fish Stock

    Pour in the fish stock and bring to a boil. Reduce heat and let it simmer for 30 minutes.

    Strain the Bisque

    Strain the mixture through a fine sieve into another pot, pressing down on the solids to extract as much liquid as possible.

    Add Cream and Season

    Return the strained liquid to the heat, stir in the heavy cream, and season with salt and black pepper to taste. Heat through but do not boil.

    Serve

    Ladle the bisque into bowls and garnish with chopped fresh parsley. Enjoy!
