    Prepare the Tart Shell

    In a bowl, mix flour, powdered sugar, and salt. Cut in butter until it resembles coarse crumbs. Add egg yolk and mix until dough forms. Chill for 30 minutes, then roll out and fit into a tart pan. Bake at 350°F (175°C) for 15 minutes.

Lemon Curd

    Make the Lemon Curd

    In a saucepan, whisk together yuzu juice, lemon juice, sugar, and eggs. Cook over medium heat, stirring constantly until thickened. Remove from heat and add butter and salt, stirring until smooth. Pour into the baked tart shell and refrigerate until set (about 2 hours).

Mandarin Granita

    Prepare the Mandarin Granita

    Combine mandarin juice, sugar, and water in a bowl. Stir until sugar dissolves. Pour into a shallow dish and freeze. Every 30 minutes, scrape with a fork until fluffy and granular.

Dried Vanilla Meringue

    Make the Dried Vanilla Meringue

    Preheat oven to 200°F (93°C). Beat egg whites until soft peaks form. Gradually add sugar, beating until stiff peaks form. Add vanilla extract and mix. Pipe or spoon onto a lined baking sheet and bake for 1-2 hours until dry and crisp.
