Iberico Pork Bone-In Ribeye

Method

Cooking Instructions

  1. 1

    Prepare the Pork

Remove the Iberico pork ribeye from the refrigerator and let it sit at room temperature for 30 minutes before cooking. This ensures even cooking.

  2. 2

    Season the Meat

Rub the pork ribeye with olive oil, sea salt, and black pepper. Make sure to coat it evenly on all sides.

  3. 3

    Add Aromatics

Crush the garlic cloves slightly and place them on top of the meat along with the rosemary sprigs.

  4. 4

    Preheat the Grill

Preheat your grill to high heat (about 450°F or 230°C). If you're using a cast iron skillet, preheat it on medium-high heat.

  5. 5

    Sear the Ribeye

Place the ribeye on the grill or skillet and sear for about 5-6 minutes on each side for medium-rare. Adjust the time depending on your desired doneness.

  6. 6

    Rest the Meat

Once cooked to your preference, remove the ribeye from the heat and let it rest for 10 minutes to allow the juices to redistribute.

  7. 7

    Serve

Slice the ribeye, serve with lemon wedges for squeezing over the top, and enjoy!
