Directions

  1. 1

    Cook the Pasta

In a large pot of salted boiling water, cook the cavatappi pasta according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Lobster

Steam or boil the lobster tail for about 6-8 minutes until cooked. Remove the meat from the shell, chop it into bite-sized pieces, and set aside.

  3. 3

    Make the Cheese Sauce

In a saucepan, melt butter over medium heat. Whisk in flour and cook for about 1-2 minutes. Gradually add milk and lobster stock, whisking continuously until the mixture thickens. Stir in cheddar cheese, salt, pepper, and paprika until the cheese is melted and smooth.

  4. 4

    Combine Pasta and Sauce

In a large bowl, mix the cooked pasta, lobster meat, and cheese sauce until well combined.

  5. 5

    Prepare for Frying

Preheat vegetable oil in a deep fryer or large pot to 350°F (175°C).

  6. 6

    Coat and Fry

Scoop portions of the lobster mac and cheese mixture, shape them into balls, and roll them in panko breadcrumbs. Carefully place them in the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

  7. 7

    Serve

Serve the fried lobster mac and cheese balls hot, optionally garnished with additional cheese or herbs.
