Fried Calamari

Preparation and Cooking

    Prepare the Calamari

    In a large bowl, combine flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, beat the eggs. Dip the calamari rings in the egg mixture, then coat them with the flour mixture.

    Fry the Calamari

    In a deep skillet or fryer, heat olive oil over medium-high heat. Once hot, fry the calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Prepare the Broccoli Rabe

    In a separate pot, bring water to a boil. Add the broccoli rabe and cook for 2-3 minutes until tender. Drain and set aside.

    Sauté Long Hots

    In a skillet, add a tablespoon of olive oil and sauté the long hot peppers until they are blistered and slightly softened.

    Serve

    Plate the fried calamari and serve with sautéed broccoli rabe, blistered long hots, and warm marinara sauce on the side for dipping.
