    Prepare the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.

Cheesecake Filling

    Make the Filling

    Add the eggs one at a time, mixing on low speed until just combined. Pour the cheesecake filling into the cooled crust.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

    Chill the Cheesecake

    Remove from the oven and refrigerate for at least 4 hours or overnight before serving.

Compote

    Prepare the Compote

    For the Blueberry-Ginger Compote, combine the blueberries, grated ginger, sugar, and lemon juice in another saucepan over medium heat. Cook for about 10 minutes until the blueberries burst and the mixture thickens.
