Branzino Preparation

    Prepare the Fish

    Clean and scale the branzino, then score the skin in a few places. Rub the fish inside and out with olive oil, salt, and black pepper. Stuff the cavity with fresh herbs.

    Pan-Seer the Fish

    Heat a large skillet over medium-high heat. Add a splash of olive oil and place the branzino in the skillet. Cook for about 5-6 minutes per side, or until the skin is crispy and the fish is cooked through.

Citrus & Herb Beurre Blanc

    Make the Sauce

    In a saucepan, combine shallots and white wine. Bring to a boil and reduce until syrupy. Lower heat and whisk in cold butter, lemon juice, orange juice, and herbs. Season with salt and pepper.

Lobster Mashed Potatoes

    Prepare the Potatoes

    Boil potatoes until tender. Drain and mash with heavy cream, butter, salt, and pepper. Fold in cooked lobster meat.

Sautéed Haricots Verts

    Sauté the Beans

    In a skillet, heat olive oil and sauté garlic until fragrant. Add haricots verts and cook until tender-crisp. Season with salt and pepper.
