    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Wash and scrub the Russet potatoes under cold water. Pat them dry with a paper towel.

    Rub each potato with olive oil, and season generously with salt and black pepper.

    Bake the Potatoes

    Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skins are crispy and a fork easily pierces the flesh.

    Prepare Toppings

    While the potatoes are baking, prepare your toppings: chop the chives, shred the cheddar cheese, and have the butter and sour cream ready.
