Prepare the Pork Belly
Cut the pork belly into 1-inch cubes and season with salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
Skewer the Pork
Thread the seasoned pork belly cubes onto skewers, leaving a little space between each piece.
Make the Raspberry Glaze
In a small saucepan, combine fresh raspberries, honey, apple cider vinegar, and a pinch of salt. Cook over medium heat until the raspberries break down and the mixture thickens slightly, about 8-10 minutes.
Sear the Skewers
In a large skillet, heat olive oil over medium-high heat. Add the skewers and sear on all sides until crispy and cooked through, about 10-15 minutes.
Glaze the Skewers
Brush the cooked skewers generously with the raspberry glaze during the last few minutes of cooking.
Prepare the Cracklin Dust
In a food processor, pulse the pork cracklings until they reach a coarse powder consistency.
Serve
Remove the skewers from the heat and sprinkle with cracklin dust before serving with extra raspberry glaze on the side.
