Prepare the Pork Belly
Season the pork belly with salt and black pepper. Heat olive oil in a skillet over medium heat and add the pork belly. Cook until crispy, about 4-5 minutes per side. Remove from heat and let it rest before slicing.
Assemble the Sandwich
Slice the pistolette rolls in half. Spread deli mustard on both halves. On the bottom half, layer the crispy pork belly, roasted ham, sliced Havarti cheese, and pickles.
Press the Sandwich
Close the sandwich and place it in a panini press or heat a skillet and place a heavy weight on top to press it down. Cook until the cheese is melted and the bread is golden brown, about 3-4 minutes.
Serve
Remove from the press, slice in half, and serve hot.
