Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the beer until the batter is smooth.
Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).
Batter and Fry the Fish
Dip each puppy drum fillet into the batter, ensuring it is fully coated. Carefully place the battered fillets into the hot oil and fry for about 4-5 minutes or until golden brown. Remove and drain on paper towels.
Assemble the Sandwich
Toast the brioche buns lightly. Spread Caesar dressing on the bottom half of each bun. Add shredded lettuce, place the fried puppy drum on top, and sprinkle with fresh dill. Squeeze fresh lemon juice over the fillet and cover with the top half of the bun.
Serve
Serve immediately with lemon wedges on the side.
