Prepare the Filling
In a mixing bowl, crumble the pork boudin and mix in the shredded pepper jack cheese until well combined.
Assemble the Eggrolls
Place a spoonful of the pork boudin mixture in the center of each eggroll wrapper. Fold the sides over and roll tightly, sealing the edges with a little water.
Fry the Eggrolls
Heat oil in a deep fryer or large saucepan to 350°F (175°C). Fry the eggrolls in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Serve
Serve the hot boudin eggrolls with deli mustard on the side for dipping.
