Preparation Steps
Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Season the pork belly with salt and pepper. Place it in a roasting pan and cover it with foil. Roast for about 2-3 hours until tender. Once done, allow it to cool slightly, then chop into small cubes.
Fry the Potatoes
While the pork belly is roasting, prepare the French fries according to your preferred method (deep-frying, baking, or air-frying) until they are crispy and golden brown.
Assemble the Birria Fries
In a large serving bowl, layer the crispy fries, followed by the chopped pork belly. Drizzle the birria sauce over the top, then add crema, pickled jalapeños, diced onion, and chopped cilantro.
Serve with Consomé
Serve the birria fries warm with a side of consomé for dipping. Enjoy!
