Prepare the Portobello Mushrooms
Clean the Portobello mushrooms with a damp cloth. Remove the stems and gills, then slice them thinly with a sharp knife.

Prepare the Dressing
In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of capers (chopped), 1 teaspoon of lemon juice, and 1 teaspoon of Dijon mustard. Set aside.

Make the Remoulade
In a mixing bowl, combine 1/2 cup of mayonnaise, 1 tablespoon of chopped fresh dill, 1 teaspoon of nigella seeds, and 1 teaspoon of finely chopped fennel bulb. Mix until well combined.

Assemble the Carpaccio
Arrange the smoked Portobello slices on a serving platter. Drizzle the caper dressing over the mushrooms and dollop the fennel remoulade on top. Garnish with additional cracked black pepper and nigella seeds as desired.
