Method

Preparation of Tofu

    Marinate the Tofu

    Press the firm tofu to remove excess moisture. Cut it into thick slices. In a bowl, mix together Dijon mustard, olive oil, lemon juice, salt, and black pepper. Coat the tofu slices with the marinade and let them sit for at least 30 minutes.

    Prepare the Caper Butter

    In a small saucepan, melt the unsalted butter over low heat. Add capers, minced garlic, and chopped parsley. Cook for about 5 minutes until fragrant. Set aside.

Cooking the Vegetables

    Grill the Tofu

    Preheat a grill or grill pan over medium heat. Grill the marinated tofu slices for about 5-7 minutes on each side until golden brown and grill marks appear.

    Char the Romano Beans

    On the same grill, add the romano beans and cook for about 3-4 minutes until they are charred and tender. Remove and set aside.

    Crispy Maitake Mushrooms

    In a skillet over medium-high heat, add a little olive oil and sauté the maitake mushrooms until they become crispy and golden, about 6-8 minutes. Season with salt and pepper.

Potato and Olive Salad

    Prepare the Potato Salad

    Boil the diced potatoes in salted water until tender. Drain and let cool. In a bowl, combine the cooled potatoes, black olives, red onion, and chopped basil. Season with salt and pepper to taste.

Plating

    Assemble the Dish

    On a serving plate, arrange the grilled tofu, charred romano beans, and crispy maitake mushrooms. Drizzle the caper butter over the tofu and vegetables. Serve the potato and olive salad on the side.
