Brewing Process

Mashing
In a large mash tun, combine the crushed barley malt and corn with 90 liters of hot water. Maintain the temperature at around 65°C for about 60 minutes to convert starches into fermentable sugars.

Lautering
After mashing, transfer the mash to a lauter tun and rinse the grains with hot water to extract the sugars. Collect the sweet liquid, known as wort.

Boiling
Bring the wort to a boil and add hops. Boil for about 60 minutes, adding hops at the beginning for bitterness and additional hops towards the end for aroma.

Cooling
After boiling, cool the wort quickly to around 20°C using a wort chiller or an ice bath.

Fermentation
Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal the vessel and allow it to ferment at around 18-22°C for 1-2 weeks.

Bottling
After fermentation is complete, siphon the beer into sanitized bottles and cap them. Allow the beer to carbonate for an additional 1-2 weeks.
