Brewing Process

Mashing

In a large pot, heat 5 liters of water to 70°C (158°F). Add the Pilsner malt, wheat malt, and Munich malt to the pot. Maintain the temperature at 66°C (150°F) for 60 minutes.

Sparging

After mashing, sparge the grains with hot water to collect the wort. Aim for about 5 liters of wort.

Boiling

Bring the wort to a boil. Add the Nugget hops at the start of the boil and the Saaz hops with 15 minutes left in the boil.

Cooling

Cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).

Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the Belgian Wit yeast and seal the vessel with an airlock. Allow fermentation at around 18-22°C (64-72°F) for 1-2 weeks.

Flavoring

After primary fermentation, add the dried orange peel and crushed coriander to the fermentation vessel. Allow to steep for an additional week.

Bottling

After flavoring, siphon the beer into sanitized bottles and cap them. Allow the bottles to carbonate at room temperature for 1-2 weeks.
