    Mashing

    In a large mash tun, add the pale malt, pilsner malt, and caramel malt. Heat 5 gallons of water to 165°F (74°C) and pour it over the grains. Stir well and maintain the temperature at 150-155°F (65-68°C) for 60 minutes.

    Sparging

    After mashing, sparge the grains with hot water (around 170°F or 77°C) to collect around 6 gallons of wort.

    Boiling

    Bring the wort to a boil. Add the Hallertau hops at the beginning of the boil and the Saaz hops with 15 minutes left in the boil. Boil for a total of 60 minutes.

    Cooling

    After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel and allow it to ferment at around 50-55°F (10-13°C) for 2-3 weeks.

    Bottling

    Once fermentation is complete, siphon the beer into sanitized bottles and cap them. Allow to carbonate for 1-2 weeks at room temperature.
