    Harvesting

    Harvest the Sangiovese and Merlot grapes at their peak ripeness.

    Crushing and Destemming

    Crush the grapes and remove the stems. This can be done manually or using a crusher.

    Fermentation

    Transfer the crushed grapes into a fermentation tank and add the yeast. Allow the mixture to ferment for about 7-10 days at a controlled temperature.

    Pressing

    After fermentation, press the mixture to separate the liquid wine from the solids.

    Aging

    Transfer the wine to oak barrels for aging, typically for 6-12 months, to develop flavor.

    Bottling

    Once aged, filter the wine, add sulfites for preservation, and bottle in clean, sterilized bottles.
