Cider Preparation

Prepare the Apples
Wash and core the apples, then chop them into small pieces. Place them in a large pot.

Extract Juice
Add water to the pot with chopped apples and bring to a boil. Let it simmer for about 30 minutes, mashing the apples occasionally to release the juice.

Strain the Mixture
After simmering, strain the apple mixture through a fine mesh strainer or cheesecloth into a clean fermentation bucket. Discard the apple solids.

Add Sugar and Citric Acid
Stir in the granulated sugar and citric acid until fully dissolved.

Add Yeast
Sprinkle the yeast over the juice mixture in the fermentation bucket. If using, crush and add the Campden tablets for sanitation.

Fermentation
Cover the fermentation bucket with a cloth and let it sit in a cool, dark place for 1 to 2 weeks. Check daily for fermentation activity (bubbling).

Bottling
Once fermentation is complete (no more bubbling), siphon the cider into clean bottles, leaving some space at the top. Seal with caps.

Aging
Allow the cider to age in a cool, dark place for at least 2-3 weeks before tasting. The longer it ages, the better the flavor.
