Prepare the Ingredients
Chop the pancetta into small pieces. Grate the Parmesan cheese and set aside. In a bowl, whisk together the eggs, grated Parmesan, and black pepper until well combined.

Cook the Pasta
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta.

Cook the Pancetta
In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes.

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the pancetta. Toss to combine and remove from heat.

Add Egg Mixture
Quickly pour the egg and cheese mixture over the hot pasta, tossing quickly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Season and Serve
Season with salt and additional black pepper to taste. Serve immediately, garnished with extra Parmesan cheese if desired.
