Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips or wedges, depending on your preference for fries.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot over medium-high heat. Once the oil is hot (about 350°F/175°C), add the potato strips in batches. Fry until golden brown and crispy, about 4-5 minutes. Remove from oil and drain on paper towels. Season with salt to taste.

Once the fries are cooked and drained, sprinkle the shredded cheddar cheese evenly over the hot fries to allow the cheese to melt slightly.

Prepare the Chicken
In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the boneless chicken breasts and coat evenly with the marinade. Let marinate for at least 15 minutes.

Grill the Chicken
Heat a grill or grill pan over medium heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes before slicing.
