Meatballs Preparation
Mix the Ingredients
In a large bowl, combine the Impossible meat, breadcrumbs, grated Parmesan, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Form the Meatballs
Preheat the oven to 400°F (200°C). Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Bake the Meatballs
Drizzle the meatballs with olive oil. Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.
Garden Marinara Preparation
Sauté Garlic
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, chopped basil, dried oregano, salt, and black pepper. Bring the sauce to a simmer.
Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
Sandwich Assembly
Assemble the Sandwich
Take a sourdough hoagie roll and slice it open. Place a generous amount of arugula on the bottom half, followed by 2-3 meatballs.
Add Marinara Sauce
Spoon the garden marinara sauce over the meatballs, ensuring they are well coated.
Finish the Sandwich
Close the hoagie roll and serve with a side of fries.
