Preparing the Fries

Cutting the Potatoes
Wash and peel the gold potatoes. Cut them into thin strips, about 1/4 inch thick.

Soaking the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Drying the Fries
Drain the water and pat the fries dry with a clean kitchen towel.

Heating the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Frying the Fries
Carefully add the dried fries to the hot oil in batches. Fry until golden brown, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

Seasoning
While the fries are still hot, sprinkle with salt and black pepper to taste.
Making the Frite Sauce

Mixing Ingredients
In a medium bowl, combine mayonnaise, ketchup, Dijon mustard, garlic powder, paprika, lemon juice, salt, and black pepper.

Blending the Sauce
Whisk all the ingredients together until smooth and well combined.

Taste and Adjust
Taste the sauce and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice according to your preference.
Serving

Place the hot fries on a serving plate and drizzle generously with the frite sauce.

Optionally, sprinkle with additional paprika or chopped parsley for garnish.
